当店のトリビュートペッパーは、青渓村で栽培されています。この小さな村で生産される「貢椒」と呼ばれる品種は、その多用途性から皇帝への献上品とされたほど貴重なものです。繊細な油分を守るため、一粒一粒丁寧に手摘みされています。丸ごと煮込み料理やシチューに加えたり、焙煎して挽き、麻婆豆腐や回鍋肉などの代表的な料理にトッピングしたりと、収穫したばかりの貢椒は、四川料理特有のしびれる辛さと、芳醇な柑橘系の香りで料理を引き立てます。
These are the real deal from Qingxi village, the story about them being a tribute to the emperor is what sold me. They're so versatile, I've used them in everything from a stir-fry to pickling and they've held up beautifully each time.
I've already used these in three different stir-fries and a braised pork dish, and every time the pepper's gentle heat and floral aroma came through without overpowering anything. The fact that they're grown in that tiny Qingxi village makes me feel like I'm cooking with a piece of history.
The gongjiao history is what sold me, and the peppers from Qingxi village didn’t disappoint in my stir-fry. They’re versatile enough for a quick weeknight dish, though I wish the bag had a bit more for the price. Still, solid pantry staple.
